Valentine's Day Treat with Beet Milk

Helllloooooo Friends! I have a special recipe to share with you all today, it's something you can make for your loved one for breakfast or a fun drink to make with kids! I made some yummy banana bread and an easy strawberry coconut whipped cream to go with the milk. 

I purchased my beets cooked and peeled from Sobey's and used this Almond Milk(made in Canada by the way!) I've tried many different Almond Milk's but this one has the perfect amount of sweetness. 

The beet milk is pretty simple to make all you need is a blender like this from Canadian Tire

Beet Milk Recipe: 

Step 1: Add 3 beets to the blender and chop them up.

Step 2: Slowly add the almond milk, I used 1 1/2 cups. Keep adding the milk until the beets have a smooth consistency.  

Step 3: Add 2 tbsp of maple syrup. You can add another if you find the taste of the beets still too strong. Add 1 tsp vanilla. 

Step 4: Blend all together one more time and beet milk is created! I would recommend storing it in the fridge for an hour. It tastes much better cold. 

I made a basic banana bread using a recipe I found on Pinterest. I cooked it in a cake pan instead of a bread pan and used a heart shape cookie cutter to cut them into hearts. Once cooled I added my strawberry whipped coconut cream. 

Strawberry Whipped Coconut Cream: 

Step 1: Store your canned coconut milk(I bought a mini can) in the fridge over night. Once chilled use a hand blender to whip into a cream. 

Step 2: Once whipped add 1 tbsp of strawberry jam, 1 tbsp maple syrup, 1 tsp of vanilla. Whip again. 

Step 3: Slather on your banana bread! 

You can have a ton of fun with whipped coconut cream by adding which ever jam you love the best!

Ginger & Turmeric Latte

Let me preface this post by saying I AM A COFFEE LOVER. I can drink coffee all day long, it has no effect on me. I simply really love the taste. But because I have some slight digestive issues, I normally try to keep my coffee intake to 3 a day. That's a challenge for me, especially since my husband loves TEA! On the weekends whenever we sit down to take a break from working, go for a drive somewhere or playing with Dominik. He always says " COFFEE & TEA?" It's our thing. We usually have a coffee & tea after dinner and he always has a tea before bed. 

Last week I was having a particularly bad day with my stomach so I decided to pick up some Ginger-Aide tea from Zehrs. I figured I would mix it with honey and lemon, it wouldn't be so bad. I've tried so many different tea's. I can't seem to pick up the taste.  

Boring ginger tea wasn't cutting it for me, so I decided to try my hand at the latest "cool" drink called Golden Milk. It seems to be everywhere. All I knew was most people used fresh ginger, (I'm too lazy for that) turmeric and Almond Milk (it tastes very gross with Cashew Milk FYI) Regular milk works as well. 

Boil 1 cup of Silk Unsweetened Vanilla Almond Milk, add 1 tsp turmeric, 1 tsp maple syrup and 1 tsp vanilla (YES I know vanilla is in the milk but I LOVE vanilla). Once boiled pour over ginger-aide tea bag and let steep for close to 10 minutes. Add a dash of cinnamon.
