As a kid I was obsessed with Reese's peanut butter cups. Living in the country means you cannot stroll over to the corner store for a chocolate bar when craving one so I had to be creative to make something at home.
I started off with the basic ingredients by using dark chocolate chips made by Hershey's chipits dark chocolate and PC Organic smooth peanut butter. No added oils or sweeteners. Then I thought it would be fun to make them a little more gourmet. I tested out mini m&m's, marshmallows, and banana.
I melted my chocolate in a bowl in the microwave.The chocolate takes about 1 minute to melt. Make sure you are stirring in between. The peanut butter is easier to spread if you microwave it for 15-20 seconds depending on your microwave. Cut up thin slices of banana and cut your marshmallow as best as you can. Also, from experience the paper cupcake cups were not the greatest. I paid a little more for the Reynolds Mini Stay Brite cups that are foil lined.
Keep in mind I made a very small batch. To make 3 mini PB cups I used 1/2 cup chocolate chips and 2 tbsp peanut butter.
Step 1 : Line the bottom of the cups each with 1/2 tsp melted chocolate and then add your choice of ingredient. I used marshmallow, banana, and mini M&M's.
Step 2: Drop a dollop of peanut butter on top of each one.
Step 3: Cover with 1/2 tsp chocolate. I added a small piece of each ingredient to the top when I was done to identify each one. Once done put them in the freezer for about 10-15 minutes.
That's it!!! They are super easy to make, fun to do with kids, and I like that it is something you can make in small portions so that you don't over indulge.
